Sticking with the topic (movies with sequels BETTER than them), I don't think I could say Lethal Weapon...the sequels were good (at least the first couple) but the original movie kicked ass because it had fucking Joshua. Raiders is a tough call...I love Raiders, but I have come to love Temple of Doom a lot too and Last Crusade was always my favorite of the 3.
T2 being better than original is the best example IMO. One I can think of that people haven't mentioned yet is Beverly Hills Cop. Original was nice, but everything was much looser/funnier in the 2nd...i.e. we knew the characters so they could take on funnier more full personalities in the 2nd. I liked the bad guy better too.
Star Trek: First Contact was better than Generations I thought (Generations being the first Star Trek with TNG crew).
I can't fucking think of any others. Tough question!

The godfather 2 really wasnt a sequel. If you read the book, the godfather one and two are actually the whole book. Its more like part 2 I think that's why it worked so well because it was actually the whole story.Comment
