Muscling is one element in the puzzle. The other is feed conversion. Sure, it's nice to have bulls that look like the bovine counterpart of Lou Ferigno/Schwarzenegger but if it must also make economic sense to get them to that size.

Based on the rippling motion made when they were shaving that bull, it seems the meat has enough fat lining/layers to make it more chewy/palatable.
