Flyover country (not countries)or the flyover states are what bi-coastal entertainment business West and East Coasters in America call the great expanse of the middle of the country as a derisive term since they never go there; they just fly over it.

PS- I don't know any model agencies that serve the adult biz in the flyover states. I recruit some new girls from the Mid-West and elsewhere directly from my own ads and on my websites however.
