The one rule you should use when cooking is that every ingredient should enhance the main ingredient and accentuate the flavor of the main ingredient.

For example, if you are going to cook a filet mignon it should be pan seared and finished in the oven. A filet does not have enough fat in it to be grilled. Choose ingredients that will enhance the flavor of the meat (Caramelized onions, sauteed mushrooms and a nice demi-glace for the sauce). Don't rub it with over powering spices so that when you taste the meat all you taste are the spices.

fuck this sounds good.

FEED ME!

I love cooking, it's one of my passions in life ;-)

Sid70 08-15-2008 07:27 AM

i can do basic shit, nothing special but ham and eggs + sandwiches, or chiken kotletas + potatos :)

Evil Chris 08-15-2008 07:30 AM

My aunt's mother used to make perogies from scratch and they were simply amazing...

Sarah_Jayne 08-15-2008 07:38 AM

I learned how to make perogies the other month. It is time consuming at first but they freeze well so are a good thing to do in batches.

PantieZ 08-15-2008 07:40 AM

I make a yummy Pizza :)

Magalie 08-15-2008 07:46 AM

Im a pretty good cook myself. I try to do everything from scratch too; sauces, marinades...etc

I make a delicious mushrooms Osso Bucco - it's my favorite dish without a doubt !:thumbsup
My Lamb Racks in a nut crust is also one of my specialty dishes ! :upsidedow

Spaghetti sauce is a basic - you have to know how to make a good real italian sauce.
I have one meat sauce recipe and another one with meatballs - simply delicious !!
When I do spaghetti sauces like that, I do a huge batch and freeze most of it.
It's easy and simple when you don't know what to eat one night.

Ok..im hungry now!

I can cook lamb rack too, its already cut and seasoned at Trader Joe's, all you have to do is put it in the oven and you dont have to season or put anything in it!

I am really lazy, I can't really cook anything, but I can make an edible salad tho. Just toss in pre-washed bagged lettuce, cut up a tomato, some cucumber, onions and bell pepper and spray some low calorie dressing on it.

I can also make a omelet, just fry some ham onions and tomatoes and mix with egg and sprinkle cheddar cheese on top.

My idea of spaghetti is boiling noodles and then dumping sauce from a jar, I don't even bother to heat the sauce, I don't care, I just dump it in the warm noodles, mix and eat. I don't have energy to cook the ground beef or make it from scratch. I am too lazy.

I can't make any sauces.

When I buy steak (which is rarely because it is very very unhealthy). I only know how to put olive oil in the pan and I just fry it and make sure not to burn it. I don't know all about
putting it in the oven and other stuff, no one taought me and it's too complicated. Add lots of a1 steak sauce, microwave a bag of frozen rice from Trader Joe's and I'm good to go.

I dont cook a lot. I like to order out.

And I avoid eating bbq even when other people cook it cause it causes cancer!! the burnt meants are carcinogenic and have been proven scientifically to cause cancer!

Is Ben's still there on maisonneuve in Montreal?

That place had some baddass meat sandwiches as I recall.

Sharky 08-15-2008 08:25 AM

I love to cook, and think I'm pretty good. One day I will go to culinary school for the hell of it. I obviously love to grill, but I'm not so bad in the kitchen either.

My passion is cooking ordinary dishes and making them taste and look gourmet. My kids love it, it's like a show every night. I get them to eat foods that no 3 or 8yo ever would.

My fav non grilled dish to cook is chicken marsala, it's easy and you can cook it 4-5 different ways.

Presentation is always important!

lol, that was my son's first bday party. There were plenty of little kids there.

I prefer to present my hot dogs to kids as octapus. Qtr them on the bottom half, poke eyes in the top then boil em and the legs curl up. Perfect for easy nights on top of Macaroni:-)

Put a little bit of BBQ sauce underneath the hot dog to make it look like octapus ink. hahaha

sltr 08-15-2008 09:10 AM

right on!

Sadly, Ben's closed about two years ago, and the building is due to be demolished. It was over-rated anyway due to its longevity.

Much better smoked meat sandwiches in Montreal can be found at Schwartz's on St-Laurent, Lester's on Bernard in Outremont, and Abie's on St-Jean in the West Island. All three have always been far superior.

I got mine today at a local place. :thumbsup

Love cooking, its one of my passions, and thank god because my girlfriend doesn't cook and hasn't for the entire 8 years I have been with her (much like most Aussie girls).

Make a great lasange, and a variety of italian spagetti dishes, also do some pretty cool asian dishes. Best though would have to be my prime eye filet steak ... after a year or so of trying to get it right its gotten to the point where I simply cant eat a steak at a restaraunt because its either overcooked, not tender enough or just badly cooked or a bad cut :( There are very few restaraunts which can cook a steak correctly, and its a shame I learned to cook the perfect steak because I used to love eating out and having a steak.

hypedough 08-16-2008 02:09 AM

Bologna, mustard, mayo, and bread. My masterpiece of cooking. Sorry can't cook a lamb like bausch :(

You telling me, hell go to a bookstore and try to find some recipe books. Oh I am talking about a new book store. I do can, dry, and freeze a lot of stuff each year. Quick edit, main reason I got into it was my great grandmother who went through depression and stuff really pounded saving and such into my head as a kid.

I would love to try canning but I live in a flat and just don't have the space or the produce. My Nana always had her garden growing stuff she would can for the winter. Perhaps one day when I move to the country.

Space is never an excuse. The equipment is pretty multi functional. Easy to store empty jars and rings when finished with product. So that just leaves getting the produce. That is what farmers markets or trips to farms are for. There is no way in hell I could grow everything I use on my small plot of land. Sure I grew my peppers this year. However I bought my strawberries, cucumbers, tomatoes (didn't have enough, never do), fruits, and such all from farmers markets and or farms. I just do it in batches and when each is at peak of season. Takes me a day or two maximum per batch, one of those days is typically shopping for the produce, cleaning stuff, etc.

I just rather see a whole bunch of jars of assorted vegetables, fruits, pickles, and such in my pantry instead of a bunch of cans bought from the local supermarket. Same can be said of my dehydrated soup mixes, frozen food items, and such. Saves me a crap load of cash and I know damn well it is a lot healthier for me.

Cooking is one of my main passion's. Then I have several hobbies that help take my mind off of the stress from work, or I guess help refresh my mind. Like all of the bars of soap around my house I and the wife have made.

notime 08-16-2008 02:11 AM

I can boil an egg or just grill the BBQ in the yard. That's about it.
My GF however has 500 cookbooks and loves to cook all kinds of food like; japanese, chinese, french, italian, spanish, etc.
I am NEVER leaving her again ;)

Space is a valid reason in may case. I simply do not have the room to store just about anything else in this flat without it bursting. It is as much about storing the equipment as it is the finished product.

On to produce..we don't have access to those kind of farmer markets in London. The only farmer markets that pop up around London are expensive places that sell trendy veggies to yuppies. Out in the more rural areas you get pick your own places and roadside stands and stuff and then it would make sense. I would have to buy my stuff from a supermarket and then there is little point when it comes to cost saving.

Shey 08-16-2008 06:22 AM

I love to explore new cuisines, I read up the recipes and come up with my own versions of everything and make them until I perfect them. Indian is my favorite, you use so many spices that you've never even heard of before and the combination of them can be amazing.

Being hispanic I also love to cook foods from different latin countries so yeah, I think I'm pretty bad ass myself. My carne asada is out of this world... :winkwink:

Not bad, not great. I can make home made lasagne, pretty good enchiladas and fajitas. I like to cook steaks and stuff. My girlfriend mainly does the cooking these days tho.

VeriSexy 08-16-2008 10:33 AM

I suck at cooking :(

Meloman 08-16-2008 11:09 AM

I'm an ok cook. Just basic meals like pasta with pesto, tomato sauce, olive oil & veggies. Sauted steaks, chick & fish with some Italian herbs/spices. All simple stuff with no more than 2-3 ingredients tops. I agree with thedoc that u don't need a lot of herbs/spices to make things tasty

I do make make my own pesto sauce in batches and freeze it. Oh and I just started making my own minestroni & chicken soup and freezing that too. Perfect for when I'm sick and don't have the energy to cook.

My mom makes her own batches of homemade tomato sauce and jars it all. Enough to last like 6 months. So she always gives me a few. Nothing is faster than a boiling some pasta for 10 minutes and throwing some fresh sauce over it. Faster than driving over to a local fast food place, lol.

I grew up with an Italian mother that cooked everything from scratch and to this day is still one of the best cooks I've ever met. I'm not just saying that cause she's my mom either. All her friends & family are good cooks too and they all agree she by far is the best. Even when visiting Italy I still find that her recipes beat others.

I've never been a big restaurant person. I go more for the atmosphere. Homemade meals just taste so much better to me.
