cooked my 1st turkey today

and did the stuffing also

don't know why people complain about slaving over the oven all day to cook a bird

it was actually a pleasure cooking for family/friends

added too much sage to the stuffing

it overpowered the delicate balance with the thyme and marjoram, but oh well.

i was worried i packed the bird too tightly and the stuffung wasn't going to cook fully

Thank God!!! Christmas is over.

food safety issues are important consideration when you are eating turkey - they are dirty birds carrying semolina

i also made a nice ham; 1st whole ham i ever cooked as well

used jack daniels and wild turkey and real maple syrup as a basting sauce for the ham

next time i got to remember to cut into the ham to get the sauce to permeate the meat as it came out kinda dry

a new observation from today is that turkey makes you sleepy just like chinese food

maybe there is naturally occuring msg in turkey?

i caught my cat licking the raw frozen turkey when it was defrosting in the sink.

i freaked when i realized it takes 3 days to defrost properly a frozen turkey

as i bought it yesterday and so had to scramble to figure out how to defrost in time

neighbor had a bigger microwave so was able to defrost there and took a chance on letting it sit out overnight and finish defrosting

you are not supposed to let it sit out as the ends and exterior will get to room temperature and spoil while you are waiyting for the inner part to finish defrosting

ok, i am done with my story - happy holidays!!!

OK, may as well keep on going a little while more - turkey should not be cooked below 325F

and to keep it from drying out - put a cup of water at the bottom of the pan

and make a tent with tin foil on top to lock in the moisture

its a hell of a lot more healthy then basting constantly with butter to keep it from drying out

when i went to safeway they were selling these butterballs that were already stuffed
