i do a similar style, okok - except i smoke 'em for about 7-8hrs, slower & less heat. i soak pork sholders/butts in brine the night before.

I did a "4-1-0" vs. a "3-2-1." Mostly because I couldn't keep the temp as low as I wanted, but they turned out decent.

Perhaps -- despite your exaggeration -- but when you're away from the southeast for a long time, it's easy to reminisce. For instance, I would much rather go to Sonny's than to any chain restaurant or self-proclaimed barbecue shack on the west coast.Comment

I'm pretty sure you could make some decent BBQ sauce with a recipe off the interwebs
Heck, if you're stuck in a premade rut, there are about 10000 better sauces than Sonnys. I don't know anyone but tourists that even eat there and I've lived at least 35 years in cities/states that had at least one.
Most of them are closed now - thank goodness. The other day I was with someone and we were amazed at how many cars were parked in front of a GA Sonnys. Seems it's now a used car lot.
