I know the wwf wrestlers bleed as well, it's just that the ufc/mma special effects guys are better at creating more realistic looking injuries.
If you look closely at Rich Franklin's nose you can see where the false nose is attached to his face to make it look as if were broken

Two very obvious fake injuries.
The ufc producers wanted to make the fights appear real which is one of the reasons that they don't have the fighters hit each other with chairs or other objects as they do in wwf. There are a lot of people though that believe it to be real because of those factors, yet surprising enough there are also quite a few people that believe the wwf to be real as well :Oh crap Some people are just very gullible and will believe anything that they are told.
Furthermore most of the so called live events are not live at all. Most of the audience, with the exception of the first few rows, is composited into the background during post production. It is a very high quality forgery and at times while watching an mma event I almost forget that it as all a big act scripted for the benefit of the audience.
