Thats fat back etc. No I mean American farmers are breeding the pigs to be leaner and have less fat overall. Often why so much pork turns out dry or lacks the flavor it used to.

Actually, strike that. I'm semi drunk& tired and not sure that its from the same episode. The slaughterhouse/lisa doesn't eat meat is one of my top 2 favorite Simpsons eps of all time tho.

I will admit that since I have not been to japan and the one US farmer who is allowed to sell real Kobe stock (who just started to slaughter less than a month ago after 10 years of raising them), I have had wagyu (what people assume is Kobe. I am an equal opportunity meat eater :) Chicken is probably my least favorite though. Good beef, fish, shellfish, venison, lamb, even wild birds beat out chicken for me.

We have several VERY good BBQ places in town. Most are only open a few days a week when they fire up the smoker. I was in one today to grab a quick pork sandwich and the owner was bringing in a HUGE (at least 50 pounds) tray of ribs off the smoker. I was drooling. :)
