i prefer my red's around room temperature.

white's slightly chilled, but not cold.

what kind of glasses are you using for the caberet?

i usually prefer bordeux or goblet style glasses for caberet. gives it room to breath.

either the wine has peaked a while ago, or you're not letting it breath enough.

haha, well there is your problem. you gotta let red wines breath before drinking them.

Also you should check as some reds are meant to be served below room temperature, but not chilled. You need to research it, but that's what I remember.

Yes, it's past it's prime and has turned. You can cook with it, will make some nice red sauce with penne.

Pour it in a glass, let it set for 5 - 10 min, might help also.

give it a few good swirls in a nice wide glass.

take a sniff to check out the nose of the wine.

if it smells good, give it a sip, if not, give it another swirl and let it sit and breath for a second.

you won't get sick if that's what you're worried about. You might have a nasty hangover though.

maybe even cheap wine gets better after 11 years?

white wine generally doesn't need to age. Lasting over 10 years for a white it pretty good.

tastes absolutely awesome...& i've got a bottle from 2000', different "higher end" brand with my name on it after this one

this kind of reminds me of the Seinfeld episode with the royal wedding cake

only its a redneck with multiple bottles of old ass wine

room temp; ~68 let it breath for about 15 minutes before pouring. make sure the glass is big enough for you to get a nosefull of the aroma first! Enjoy my man!

A '96 Cabernet needs to breathe at least an hour, but it sounds like it's too late. Too bad.
