It depends one how much you trust the buyer and how much money is involved.

You could use someone like sedo.com for their escrow service.

OR.. you can just sell it yourself.
1) buyer pays you and you are reasonably certain you have the money
2) you "unlock" the domain if it is locked from registrar changes
3) buyer tries to transfer it to himself
4) you approve the transfer
