Variety. I know my own color varies depending on whether or not I've been tanning. I'm white, but they still get brown (or brownER) so I don't see that as being totally connected to race or ethnicity.

But yeah . . . looking at other chicks I can appreciate the full range of nipple color. I do love small hard corky brown ones though, especially on middle eastern type girls with those really firm ripe boobies.
