Yeah that was a staged part of the act, he probably puts the hat back over it and it "comes back to life" or something.

Looks like he had what's called a "dove sleeve" on to extract the gerbil when he "put it under the hat". There's no mistaking that and leaving the gerbil underneath by "accident".
