who likes to cook? recipe

One of my clients will be on TV tomorrow morning, promoting her restaurant, in the local San Diego channel. She will be presenting a recipe, which she made me taste (I was the lab rat), and it was just delicious!
Here it is, if you guys like to cook

Susanna?s Cilantro Pesto (serves 4)

2 Bunches Fresh Cilantro, Washed,pat dry

1 Cup Oil Vegetable, Canola or Olive oil blend

1/8 Cup Pine Nuts Toasted optional

2 Cloves Garlic, Peeled & Mashed

¼ Freshly Grated Parmesan Cheese

Salt & Pepper to Taste

Add Oil to the blender and Cilantro, Pine Nuts, Garlic and Cheese. Blend to Pureed texture. For Chunkier pesto add only half the Cheese to start and the other half for the last 10 seconds

Better if prepared at least 4 hours in advance or use within a week in airtight storage. Refrigerate until use. Place pesto in Squeeze bottles with tip cut off. Place refrigerated bottle in Boiling Pasta water for 10 seconds to take the chill out. Shake well.

Lightly toss pesto in steaming pasta then reapply a second pesto layer when plated. Serve immediately

WITH ANGEL HAIR PASTA
Add Feta Cheese Crumbles and diced Tomatoes. Heirloom tomatoes preferably.

BAJA CHICKEN
Grilled Chicken Breast top with Cilantro Pesto, and serve with Sauteed Spinach and Tomato, Avocado Chutney.

I do most of the cooking and usually fix a dinner every other day. I make enough for left overs so the in between nights are just as good as cooking nights.

I've done a similar pesto before and it's good.
