I noticed when http://pooncity.com goes over 20k in a day the site is starting to lag a bit. I dont host any movies - 150-200k pics are the biggest files on the site.

Normally I'm around 5-7k visitors per day but this has been increasing lately

When should I go dedicated and ditch the virtual?

Most I have seen is around 500k mbps peak.

When you start in this business is the time for a dedicated server at minimum. Its past due time for you, dont risk your business bro.

I'd say you're about ready as soon as it's starting to lag. A lag can cost you signups.

I would say this depends on your hosting provider. You can probably go for a dedicated server right from the beginning, as they are really cheap anyway.

On the other hand, I also did set up a "porn cluster" for a provider I work with, so some of their clients could revert from their dedicated server back to a hosted product, as a single box couldn't handle the load anyway.

It sure depends on what kind of site you're running, how good the backend-code is, what software is used for the server itself and how well it's configured.

If your provider knows what he's doing, you may never really "need" a dedicated box. If you think you know it better than they do - go for it right from the beginning.

If you're having problems, its time to consider going dedicated. Though really, if you plan on building more and more sites, grab a dedicated server as soon as you can afford it, you'll thank yourself in the long run.
