I want to make some. Any particular kind of gravy or cheese to get? The fries look like fries from Tommy's here in SoCal.

you can start out with spagetthi sauce and Mozzarella cheese if you dont have cheese curds for an itallian poutine.... You can also try barbecue sauce... its good.. Here, we have poutine sauce at the supermarket.. There's more chicken broth than chicken fat in it...

Smokey, Poutine is dish in the same way a sandwich is a dish. You would no more order a sandwich as have them ask "do you want the bread" than asking for a poutine and having them ask if you want fries. Poutine is the dish, not the dressing.
