Can't recommend so much jjjay - it's really a matter of personal preference, priorities and having a motivation to move.
But.. there are just so many countries as possibles and depending on climate, stability and the usual list of factors.
My UK lawyer decided she wanted to leave and follow my tracks and head for central America/Caribbean. She then got the bug about living in a ranch in South Africa in that time, and is doing just that now and enjoying a better lifestyle. It took her under three months to pack up and sell off her legal practice and switch off the lights.
Currently there are, - not sure exactly, - but between 30 and 40 families I know of from the UK moving to Costa Rica. In addition, I can think of a number of webmasters (some on this board) heading in the same direction. When you have a "mobile biz" it's a lot easier.
Spain, Gibraltar, Greece and the Med islands etc are obvious candidates for folks living in northern Europe.
Personally... I'd go for govt stability, no wars or aggression, decent climate, does not have to be a "wealthy" country, but with decent infrastructure, friendly people (most folks are given the chance!) and not least - a location that does not bleed you dry on taxation, assuming they have any taxation. My preferences lean towards Costa Rica, Venezuela (when the problems depart) and almost any South American country where there is some stability. There are also a fair number of Caribbean islands that fit the criteria.
As a footnote, there are just too many opportunties outside of highly industrialised countries which put "conventional investment" to shame.
