I've noticed that as well, I've had a few sites hit #1-3 spots within days of putting the sites up, and then dropping a few weeks afterwards

These have been up more than a few weeks. I'll post if they drop but it's dozens of terms.

Slurp is killing me right now... My indexed pages keep fluctuating (by fluctuating, I mean +/- 200 pages or so) each day.

yep. They're spammers. Many of the top spots are total bullshit keyword loaded and totally unreadable, spam pages. A real site has content of some value.
