What is the normal

...temperature that most cars normally run at? I am aware that different cars run at different temperatures...but what would be the average?

No, but would you like people to tell you the average temperature in the passenger section of a car? or would you like the average temperature of an engine? Perhaps you're interested in the average temperature inside a tire at highway speeds?

My thinking was between 160-180 degrees...but my mechanic told me this morning that it is around 190-195...average. This does not sound right to me.

More input please?

Technically, Fred was the engine, and since Fred Flinstone was human (I think), we could probably assume that his body temperature was around 99 °F or 37 °C

Although, since he had to do all that work, he might have been running a bit hotter. But then sometimes Barney was in the car too, and I'm sure that reduced the load.
