What i do is whisk the eggs and put in a pinch of salt. I put a tiny knob of butter into the frying pan and wait for it to melt. While that's happening, i throw in a dash of milk or a tablespoon of cream and whisk it into the eggs. I cook 'em slowly. Probably about 3 or 4 mins worth of cooking. It's extremely basic but the result is much better in my opinion. And oh, use eggs that are anti-biotic free. They're more expensive, but well worth it. The flavour is so much more intense. You can see the difference in the colour of the yolk straight away. Makes a huge difference to any meal that's got a lot of egg in it.
