The reason I would imagine is because their minibars stock liquor in them. If you really wanna get around it, bring an ID that doesn't have your age on it (if you have one) or some kind of ID that doesn't make it so obvious as to your age (like a health care card), and when you check in, get on your cellphone with someone so they won't ask you many questions. Also make sure you prepay your hotel room like through Expedia and you'll almost always get it.

Back in the day....I was 15 and the drinking age was 18. Driver Licenses didn't do many checks and in FL you could get them the same day.
I took a friend's information (she was 18), went to the FL DMV, told them I was her, I'd lost my license and got a legitmate license with her information and my picture. Granted, if anything had gone wrong (I'd been in an accident, gotten a ticket and gave them her ID instead of mine) it would have been nothing short of pure hell, but when you're 15 and 18, you really don't think about that.
