If you are using Windows, try accessing the iPod from My Computer and then dragging from there. Windows should treat it like a removable hard drive.

The Mac should just let you drag and drop.

On my old iPod using xPlay, it buried the songs a few folders deep in strange numbered folders. I'm not sure if it is the same for the Mini. Try looking in all the folders from My Computer and see if you can find them. Then, do a Ctrl-A to copy them all and Ctrl-V to copy them to their destination folder. It may have spread them out over numerous folders on the iPod though. So it may take awhile. Good luck.

rofl .. look into EphPod .. great itunes alternative with the ability to take Mp3's right off of the IPOD to the PC with out making you hunt the F_ folders in windows.
