A combinations of...

1) Checking out where popular sites were hosted. One assumes a popular site was able to become popular with the help of solid hosting (this assumption can be wrong but not often).

2) Word of mouth and/or observing which companies have a presence for example on a place like GFY and the threads with references and recommendations from those that use them.

I have used you before.

Here is how I heard of each hosting company I used:

UUNet (my first one when they where UUNet in 98 I think) - magazine ad
Level3 - cold call from a sales rep
AT&T - referral
Alchemy - referral
You - referral from Paul
NR - referral from my Alchemy sales rep (go figure)

My partner and I split so now I host about 6 servers total with:
EV1/HostCentric/Rackspace - from referrals

I will soon move back to COLO with NR.
