freebsd out of the box has proven to be the most widely used secure OS

I dunno about windows but linux would be the most hacked server unix I am sure. All the script kiddies love linux and I think a lot of people using it leave defaults on.

if you are really paranoid I would go for OpenBSD but I don't htink there is much in it the main thing is to always keep your SSH, NAMED, APACHE, MYSQL, PHP etc up to date and stay away from lame canned scripts

It depends more on who's setting it up and whether they're on top of the security issues. Getting the latest patches, making sure all the passwords are set and not easy to brute force, making sure the only network ports open are the ones that need to be and keeping the patches up to date when new security holes are found.

Probably the least vurlnerable would be netbsd or freebsd running apache. The most vulnerable with be older versions of windows server running iis, with new versions doing better, assuming no one finds another hole.
