one of my great joys is cooking for myself and also for friends and family. Once you get a basic idea of what does what, what should go with what and get all kinds of tools/gadgets you can whip out meals pretty quickly!

I already posted my recipe for beef stroganoff, here's my recipe for beef stew.

Small amount of oil
Small amount of flour
1/8 cup flour
1 onion
2 tsp salt
1/2 tsp salt
1 can S&W original stewed tomatoes
2 - 2 1/2 lb stew meat
3 lb potatoes
1 bag baby carrots
1/2 cup of a small can tomato sauce

Sautee chopped onion in oil. (use about 2-3 tbsp)

Brown meat with a little bit of flour. (use about 2 tbsp)

Add 3 1/2 C Water, 2 tsp salt, stewed tomatoes (I like to chop them in the food processor), 1/2 C tomato sauce. Bring to boil then simmer covered 2 hours.

After 1 hour 40 minutes, peel and chop the potatoes. Baby carrots don't need anything done to them.

Add potatoes, carrots, mixture of 1/8 C flour & 1 cup water, 1/2 tsp salt. Bring to boil, simmer about 50 minutes, or until vegetables are done.

I cook nearly every meal here and very rarely order in. Fast food is limited to the odd road trip or strange craving.
I am also very picky about ingrediants used, grow a vast amount of my own produce/herbs, buy new steer each year that a rancher raises, slaughters, and ages for me (for most of my beef). Get poultry from locals who raise them, same with eggs, and so on.
I am positive my kicthen knives, pots, and pans cost more than my first two cars. Basicly I am a cooking freak.

Depending on how much time you have (brine works wonders for pork), to what you have on hand (stuffing them is great), to what fruits you have (pork goes well with fruit braising).

Following curtesy Alton Browns Cookbook.
Make them often and they are great.

double thick bone-in loin end pork chops
1 cup salt
1 cup brown sugar
1 tablespoon black peppercorns
1 tablespoon mustard powder
2 cups cider vinegar, heated
1 pound ice cubes
1 1/2 cups cornbread, crumbled
2 tablespoons golden raisins
1/4 cup walnuts, roughly chopped
1/4 cup dried cherries, halved
1/4 cup buttermilk
1/2 teaspoon ground pepper
2 teaspoons fresh sage, thinly sliced
1/2 teaspoon kosher salt


In a plastic container put the salt, sugar, peppercorns, and mustard powder. Add the hot vinegar and swirl to dissolve. Let mixture sit for 5 to 10 minutes to develop flavor. Add ice cubes and shake to melt most of the ice. Add chops and cover with brine. Refrigerate for 2 hours.
Remove chops from container and rinse. Cut horizontal pockets in each pork chop for stuffing. Combine rest of ingredients, and put into piping bag that is not fitted with a tip. Pipe each chop full with cornbread mixture. Grill the chops on medium high heat for 6 minutes on each side. Turn each chop 45 degrees after 3 minutes to mark.


(note, it is easiest to get your water to right temp if you put it through your coffee maker)

Since I got into this business I NEVER cook!!! I live on take out. However before I got into this business I was an executive chef for 12 years.

Classic french culinary training and I dial a phone for dinner every night, go figure!~LOL

Well, after several years of rarely eating my son moved back in with me, so now I feel obligated to eat.

When he was in the academy I cooked dinner almost every night. Now that he is out, and summer is here, we either barbecue or go out to eat.

Ordering pizzas? Not for me, I can't get them through my throat anymore. Sometimes I buy one at the supermarket though.

IMO pizzas from the supermarket are far more crappy than the ones you order. Moreover, you have to take the time to prepare them by yourself :1orglaugh
