a bird has 2 wings, 2 thighs, 2 drumsticks and a breast that should be cut in 2 - it has joints and seams that are there for a reason

If you were used to seeing the mountains of water melons in the parking lot at the bottom of the Carmel market in Tel Aviv, it wouldn't even occur to you to think of them as "soul food" :)

I used to cut meat . . . there is a right way and a wrong way . . . .have you ever gone to a grocery store or a butcher shop (outside Mexico or China) that cut a chicken like that?
