Rain or sun, we barbecue on Sunday. Good beer, good friends, and damn good food. We usually do chicken, brats, or burgers but today we're whipping up some tasty burrito/fajitas. I'm not sure exactly what you would call them, it's my little recipe and it's fantastic.
Make up plenty of white rice on the stove or the crock pot. Throw in a few cans of corn for color, texture, and variety. Chop up some green, red, and yellow peppers for that little extra "spice me up".
Fire up the grill and throw on your chicken breasts or carne asada. Today we're doing chicken. A little marinade of sorts is always a good idea.
After the rice and chicken are ready, mix in a jar or two of Pace Picante salsa and your chopped up chicken. Throw some flour tortillas in a pan to warm them up a bit, throw your filling in, grab a beer and you're set for the afternoon.
