Noting this thread, the remake I'd really like to see isn't much of a remake; I wouldn't dare fuck with this classic, but I'd like to see the shark scenes in "Jaws" redone digitally & tastefully.

Its an all-timer I know, but I think it would be a great idea and make a ton of cash.

While I prefer originals, this thread is about remakes, so I would say:
Rollerball (I'm aware of the recent remake, but have erased all memory of that wretched piece of dogshit from my mind)
Slap Shot
Spiderbaby (with Sid Haig reprising his role as Ralph from the original ;-)) In a way Rob Zombie's House Of 1000 Corpses had a ton of references to this 60's classic and could almost be considered a remake...nevermind, that would be an homage ;-)))

None of them would be as good as the original but I would like to see the following movies revisited:

1) I Am Legend - made twice as The Last Man On Earth with Vincent Price & The Omega Man with Charlton Heston

2) Race With The Devil

3) Rosemary's Baby 0 I liked the sequel, Whatever Happened To Rosemary's Baby, but there could be more movies done (if The Exorcist and The Omen could have them why not this one)

4) Dark Shadows - two movies were made, House of Dark Shadows and Night of Dark Shadows. A third one was planned but never made. With the new Dark Shadows series coming from the WB (hopefully this fall), maybe another movie will be made.

6) Hawk The Slayer

7) Dungeons & Dragons done right - one is supposedly in the works but I hope they took notes from Lord of the Rings

8) Superman series - a new Batman movie has already started production so maybe the Man of Steel will get a reboot soon

I could come up with a few, but in this day and age of sensitive people and politiacal correctness, it is a waste of time to even think of remaking most older movies. Hell, I bet if they re-did Roots the black people couldn't be refered to as ******s. Think about all the Mel Brooks movies. So many people would be offended if those were made now that they would never see the light of day. All those WW2 movies with John Wayne fighting the Japs.. Bet they couldn't use the racial slurs if they made it now...
