for champaign - veuve cliquot ... the price is great, and and the quality and flavor really doesn't get better - even if yo move up to bottles that are vastly more expensive.

for red and white - the chateaunuff du pape region produces several amazing cabernets and chardonnais

Forest, you clearly know what you are talking about so I have a question. Sometimes when I am in Europe they have "organic" wines on the menu that are usually red and served cold. They are always awesome. What makes them organic and why are they served cold?

You can't beat a Borolo.. Well if you like a heavy wine which we do here. Montreal is amazing for wine.. Most SAQ signature stores(high end liquer stores) have Borolo only sections.. Italians definitely dominate the wine scene but I have to say the taste of good Hermitage wines are always intriguing.. So unique of a flavour it is nice and different..

I have actually had one 'good' californian wine.. Great taste, but the body was lacking, as it is with all wines except for Italians in my opinion...

Organic is Big over here and becoming bigger in the states

Proper Cellar temp is 58-60f MAX!

give the wine room to open up and expand as it warms

If you open a bottle at room temp its got no were to expand and develp

americans tend to bruatlise their wines and we also tend to drink them way to young

its tough to compare any wines with BIG REDS in italy

the vine is soo old and the grape so strong

the BIGGEST wines in the world are italian

Heh, my GF and I love to go downtown to the main Signature store and stare at the bottles of '99 Chateau Haut-Brion .. One day when I have enough money to justify spending 900.00 for a regular bottle we are going to get one..


What kind of Decanters/glasses do you guys have?
I have two decanters, the crowd favorite is the Vinum Extreme(I imagine we all know what that looks like), however it isn't as efficient as my magnum decanter

As for glasses I tote the complete Riedel red wine set.. What really surprises me is when I run into people that 'love' wine but don't have the proper glassware for it.. Kind of like Beckham wearing cross trainers in a game in my mind.. Most people fail to realise how different and enhanced wine tastes when drank with the proper glass. Hell Riedel even makes special juice glasses which enhance the flavour of juice.. Most people would say 'yea right' which is what I said when talking with the representative at my old cellar design store, but after spending the bucks on the set and then doing a taste test and comparing the same wine, with and without decanting, and then with my old glasses compared to the Riedels you realise how much of a huge difference those glasses make..

the biggest prob with a wine like that is you ned to have the storage facility for it

I suppose it is all a matter of taste.. If I am hot and want to cool down I will usually just get a cheap aussie white wine some 7-up and go nuts with that.. But if it is red I would go with a cheap table wine, or une Vin de Table instead.. Just me though.. all a matter of taste.
Oh and ALL wines don't have a time and place, unless you can give me ONE good time or place for a Blush :D hehe, ugh..

The sterling Merlot (depending on the vintage and vinyard produced from) can be a top notch wine

sutter home makes a "blush" style wine

cant remember the name been years

but its actually quite crisp and clean and not to fruity at all

Hopefully closer to the 25k mark. I would think you could get something much nicer than what is in that picture for 75k.

its depends on if the shelvef are hand crafted or machine made

the type of wood

the amount of Prep need to airtight the room

ect ect ect

soo many variables for cellar constrution

My uncles cost him 22k and is no where near as nice as that one

But all the shelvef are hand carved cedar

I've been drinking too much wine to have a favorite.
Wines that I've had in the last month that stand out in my mind are all from cali.

the 95 shafer HSSLD I talked about in another thread, 96 opus, 97 cakebread, 96 heitz.

When I'm home, I like to pull a bottle out of the cellar @ 54-56 degrees and decant it for 1/2 hour or so letting it warm up a bit.

most unusual bottle I've had has been a 64 lafite. 64 was a shit year but has sentimental value so I've got a few bottles.
It was great! so thick and old but still held great taste. I've since opened a couple more bottles from other sources that have been vinager.:(

Rick all the trouble we have gotten into together and we have never drank any wine during or around these events...

I love good merlots, but am quite happy with Mondavi Coastal as my staple wine... buy it by the cases and drink it quite a bit.

I always default to it when out as well if no one is sure what they want, its a good idea until I get a bill for $260 ($20 in a wine store) in vegas for the bottle...lol

And I special order almost all the red organic wines our local shops can get in, think I have sampled around 20 different red organics as they come in (they sell out quite fast here as well).

Rick a wine night is in order next time we see each other... looks like enough of us here would be into it as well

Went to a wedding there last year during harvest. It was OUTRAGEOUS. The wines are becoming more and more commercialy available as well which is nice for we East Coasters,
