It generally reffered to a type of bar frequented by the country listening, rinestone wearing, beaver hat toating, cowboy boot clad, rowdy western folk. Juke box possible or band behind chicken wire, decorated like many Logans Resturaunts.

Honky Tonk...

Apparently, there is a kind of player-piano called a Tonk. And there was a time when white people would play some music at the wrong speed, leading blacks to talk about "honky tonk" music.
