I’m sure there are great benefits, but I’m not sure if I’m missing something. Is laying in bed fine?
Is there anything more to meditation than thinking of nothing and focusing on breath?

I haven't tried true meditation myself, but have been told by several people that the "simple act of thinking of nothing" is actually incredibly difficult to do.

In my experience, it's not so much of thinking of nothing, as it is just letting the thoughts flow by. Notice that you had the thought, and then let it go as opposed to getting attached/involved with it.
It is often helpful to use a few labels to help with your noticing. I use feel, hear, see. Feel means everything from the coolness of air as you breathe it in to the pressure of the chair against your back. Hear means both hear out...external sounds...and hear in, meaning internal chatter. I typically meditate with closed eyes, so to me, see means mental imagery.
It is fine to lie down, if that is how you are most comfortable, and you can stay awake.
As to your question if there is anything more...there is a wide variety of types of meditation. Some common ones are mindfulness, loving kindness, and body scan.
There is so much information that a person can get overwhelmed when they start. So if it seems like too much, I would suggest finding some guided meditation program like Calm and heading from there. I personally don't like guided meditations, but they were helpful when I started.~

There is nothing worse then sitting and focusing on your breathing. When I do that my automatic breathing turns off, sometimes for hours.
I think you'd need to do something like hike 1 or 2km into a forest and then do it so that there's nothing but nature sounds. If you do it at home some truck will drive past or SOMETHING.Mechanical Bunny Media

I am aware of the breath from the first second of inhalation to the last second of exhalation.
