Granted, this is a shit way to do business for Choopa and I would steer any of my clients far, far away from them if they work like this - but he should have just cancelled or changed his card number after shutting down the servers.

It's not a scam... I would say as a courtesy they should have given you notice some 2 months before that your contract will auto-renew, but a hosting contract is no different then any other contract... If you hired someone to build a house you'd read through the whole thing. When taking out a bank loan, you read through the whole thing, etc...
