Remove his admin privileges from the page, pretty simple? There is no user/pass for a page, it's part of your personal profile. I feel I am the luckiest guy in the world: after experimenting with 10-12 employees in the last 4 years I have 3 who are all fukkin reliable and with who I want to work until the end of times.. THIS limits my business I know well as I really dont want to hire another employee to risk this flawless system we have here. Threaten him with a court order to give the details up.
(don't know where you are based) but usually as its a business account it comes under business property/ resources and therefore if his employment has ended he should not have access to it.
Just send an official letting stating he has XX number of days to give you the details or you will be taking legal action.

I think you can contact FB through some labyrinth of forms and stuff.. After you get to the cheese you should be able to prove you own the biz and claim the name, etc. back.

The key to firing someone who has access privileges to your network is to play nice and not let on that you know they're doing something they're not supposed to. Obtain the login info under a false pretense (IE.. you need to post something)... Then once you have it, change it and proceed with firing the SOB.
