                                              Don't let people wander away. 5 minutes after called, disqualified if not ready to go. No substitutions. You have to be strict if you really plan on finishing in 2 hours. I'd just figure it won't happen if you have a lot of teams. You should probably limit that too.

                                                      agreed on all fronts. you could limit it to 32 teams, and do single elimination.
                                                      and I think the key is to have plenty of tables; 16 would be ideal so the whole first round can happen at the same time

                                                                      and 2 hours is just official time, the tournament will extend pass the allotted time for all teams that advance - 2 hours will be plenty of time to chop the the field down to prizes rounds
