    Big trouble in little China: Hamburger Recipes

    I just got back from a trip to a international supermarket which sells ground beef. This place is 3 hours from my house and the only place that actually sells this stuff.

    I bought quite a lot of the stuff and now I want to use it. I want to make the bestest hamberburgers in the world. Any gfy burger experts want to share me some nice tips and tricks? I know there are thousands and thousands of recipe sites with all kind of ideas; but was hoping someone on here might have an original angle or something .

    if i want to make good burgers i get the best beef i can get and mince it myself a little bit of salt and pepper

      I recommend you use medium ground beef as the extra fat will make them juicier. I mix it with some chopped onion, a couple sachets of oxo beef bouillon, and some worcestershire sauce. Don't play with the patties while they're grilling, just touch them to flip em. Then let the patties rest for at least 5 minutes after they're done.

      For traditional burgers, I add red onions, tomatoes, green leaf lettuce (don't care for iceberg. myself), cheddar cheese, pickles and mayo/mustard/ketchup mixed together for the sauce.

      For something different, caramelize some onions by cooking them on med/low heat with some raw brown sugar and a few drops of worcestershire for 30-45 minutes. They're done when they turn a deep golden brown color. Then melt some aged english white cheddar on the patties, add a few pieces of sliced jalapenos and top it off with the onions, all on a toasted kaizer bun.

          3 hours to find a butcher's? I can hit 3 with a stone from where I live, granted 2 of 'em are Halal and don't do pork but they have some killer lamb

            Supposedly just plain grilled meat plus a slab of onion and tomato is a very old, arguably original hamburger recipe. You just need quality vegetables and beef.

              Beef. Egg yolk. Sea salt. Ground black pepper. A little habanero pepper and a little chili powder. Mix, grab a handful, toss hand-to-hand into a hamburger patty, then fry that shit in a tiny amount of olive oil. Pan should already be hot. Flip once and only once. Scoop out onto kitchen roll when done to absorb excess grease/fat.

              Top with the cheese of your liking on a bun or in between a nice thick baguette.

              Shit is fucking delish, yo. I've been on an oden kick for the past few months. Time to get back into home made heart attack burgers.

                saw this burger on a man vs. food recipe. I loved it so much this is the only way i have made burgers over the last year. Oklahoma Onion burger. messy but damn juicy..

                4 tbsp. canola oil
                1 lb. ground beef,
                gently formed into 6 balls
                2 medium yellow onions,
                very thinly sliced with a mandoline
                or a sharp knife and divided into
                6 equal portions
                Kosher salt, to taste
                6 slices american cheese
                6 hamburger buns, toasted


                1. Working in 2 batches, heat 2 tbsp. oil in a 12" cast-iron skillet over medium-high heat. Add 3 beef balls and, using the back of a spatula, press down on them until they're thin; cook for 1 minute. Top each patty with a portion of the onions; season with salt. Press onions into the meat and cook for 1 minute more.


                2. Flip burgers; flatten with the spatula. Place a cheese slice on each patty and let melt while onions and meat brown. Serve on buns.


                Pairing Note This burger benefits from a dark, sweet beer, like St. Peter's Old-Style Porter ($38 for 12 bottles), from a brewery in Suffolk, England. —Ania Zawieja

                            Best burger:
                            use a tbsp of bacon grease if you have it.
                            Put the bacon grease in the pan, mix your hamburger with salt, pepper, liquid smoke and a dash of worchestershire sauce and cook it in the bacon grease.

                            If you're using lean meat, add a pat of butter on top of the burger.

                            most importantly, only flip your burger once and never push down with the spatula after it's started cooking, it will dry out your hamburger. If you like yours more well down, place a weight on top of it or cook it longer.

                            and agreed, always use toasted buns...

                              I've been on a juicy lucy kick. use any of the recipes above but instead of placing the cheese slice on top, fold it up and place it between 2 thin pattys and seal it up. fucking rocks.

                                  always been interested in trying it, how you find the taste differs? I'll add a 1/3 ground pork mixture to the mix sometimes for added juicinesss but not sure the purists would dig that one either

                                  I just cut and paste it from the site hehe It's a hell of a lot simpler than it appears.. just mix meat add in some spices, slice up onions thin and smash it down on a skillet.. done in 3 mins!

                                    i just use sime finely chooped union, garlic, an egg yoke, a handful of oats and Worcestershire sauce. much it all up in the ground beef, cook and enjoy.

                                      here is one for you :


                                      1 lb ground beef
                                      1 packet french onion soup
                                      1 small oinion chopped onion
                                      8 slices of swiss cheese


                                      combine first 3 items and when packing burgers ad 2 slices of swiss cheese in the middle of eatch burger.

                                      grill over charcoal

                                      add to toasted buns with desired toppings ..lettuce tomatoe ketchup mayo..etc

                                          and i still use it.
                                          you need ground beef, eggs and some breadcrumbs
                                          add some spice, pepper, salt etc
                                          now the key is to make the burgers slim, and put a piece of brie cheese in the middle of them.
