I love the stuff, but the strangest thing I turned allergic to it when I was about 19. Sucks for me. I miss it alot.

I call it cock sauce and I love it.

I don't find it that hot though? It's great on a chicken or tuna salad sandwich.

Yes, it's thai. In the US though over the last decade it seems to have migrated into most asian cuisine.

It's a de rigeur ingredient at the moment. One of my favorite food blogs, Serious Eats, has tons of recipes for using rooster (or cock, if that's your bag) sauce. And I believe there are even a few recipes for making your own approximation at home. Sriracha is pretty awesome, I'll give you that.

it looks like a cheap Tabasco knock-off; I've tried gazillion hot sauces and I am still searching for something better than Tabasco, but probably there isn't

It's not really the same kind of hot sauce as tobasco. It's more akin to a ketchup in texture, it's more robust than just heat.

Because I have developed an allergy to it I can tell you 100% certainty that sriracha is an ingrediant in spicy mayo at most sushi bars.

Hell yeah, k0nr4d! I put it on tons of food. From spaghetti to breakfast sandwiches to asian noodles, Sriracha (we call it "cock sauce" here) is definitely a MUST HAVE condiment.

We have a tiny little pepper here, really small, and it's the hottest thing you've ever put in your mouth EVER. I'm betting it's made with this. I can't eat them, too hot. Straight from hell. It even comes out your ass hot.

I think hes referring to birds eye chili, they are very hot and theres actually a company which makes a hot sauce for it for export. The name escapes me but its very good. Much hotter than siracha, and the consistency of Tabasco.
