Do the bike ride from the top of Haleakala. Theres a sunrise one & also a little later one. I'd say take the later one cuz you have to leave a 2am for the sunrise one.
Go to Cove Park in Kihei & take some surf lessons. That's always fun.
Past Wailea go to Big Beach. Super nice beach, you can also climb over the rocks & go to Little Beach (the nude beach). There are also a bunch of small beaches around there that are really private (changs beach, secret beach). If you can find them, go there.
The drive to Hana is overrated. Take a Helicopter & stay a day at the Hana Hotel. It's great over there.
Near Big Beach, out further, there's a place called "Fishbowl". You have to hike 1mile over lava to get there, but it's the best snorkeling on the island. Get a book called "Maui Revealed" that's available all over (stop at costco when you get off the plane). It's a great book & gives lots of local tips & places to go.
Molokini is overrated too. The coral is way too young.
A whale watching trip is good from Maalaea Harbor, but whale season is almost over, so you might not see any. The aquarium down there is nice too.
In Lahaina, just walk down front street.
Paia is cool ...kinda hippy, but fun. Just pas Paia is Mama's Fish House. Absolutely the best place to eat on the island.
Not many good restaurants on the island. The best pizza is a Tiki Lounge in Kalama Village in Kihei.
If you dont have a room yet, definitely stay at the Grand Wailea. It's hands down the best. And go to the spa. The Terme kids ASS. The pools are great too. Swim up bar, waterslides & hidden hot tubs, etc.
