    You know you are on a health kick when...

    You make a mung bean and spaghetti squash curry for dinner and it actually sounds appealing. Suprisingly tasty.

    I have always liked vegetables apart from raw onions but I am trying to explore vegetables and pulses that I haven't really had much in the past.

    In addition I am trying to have a better lunch. I normally have a sandwich and it is usually pretty healthy but I have been trying to make my lunch vegetarian and therefore my sandwiches veggie. So far my faveorite is hummous, grated carrots, grated beetroot and cress with a tiny bit of mustard. I need to come up with more healthy veggie sandwich ideas so I don't get bored. Anyone have an ideas?

    try a roasted veggie sandwich -- peppers, mushrooms, eggplant, (onions) & garlic with a bit of sprouts or lettuce. To roast your veggies, slice them up, drizzle a bit of olive oil on them and cook them on a high heat in the oven. They will turn into very yummy, somewhat sweet versions of their raw selves.

        Also, you might want to make yourself some lunch salads featuring freshly cooked salmon or some other serving of fish on top.

            Make a ham a cheese samich. Cover both sides with butter and grill it to golden brown perfection. You only live once. Enjoy it.

                    im the exact opposite...i hate cooked onions but dont mind them if they are raw...

                    something to try :

                    Pita
                    avocado
                    shredded carrots
                    slice some bell peppers thin
                    some spring mix
                    olives
                    artichoke hearts
                    with a dill cream cheese (you can make it or buy it...you can always just use hummus,some sort of dressing,or just cheese)

                      Never could get into mung beans....but, ya know, Sarah? That sounds yummy...

                      I knew I was on a health kick when Mom made brownies yesterday and the smell bothered me, rather than enticed me.

                      Try a low carb tortilla (80 cal) with pea pods and spinach and pico da gallo or any salsa you like.....or any veggie you like, maybe some jicama for crunch. They are yummy. I do eat chicken, so I make a wrap from chicken and chopped peapods, spinach and salsa.

                          I wonder if jicama is called something else in the UK. Spaghetti squash has only just become available here so I grabbed two of them the first time I saw them and am working them into things. The good thing about them and the mung beans is they can be hidden in other dishes. That is a good thing since my flatmate has a mental block to anything that looks like a vegetable.

                                      being praised as a 'super food' here lately as it is low on the GI scale and full of the right fibres, etc. Since I have insulin issues I try to eat stuff lower on the GI scale

                                        Ah, ok, I know what it is. I don't believe it's called a mung bean over here though. The British have their own way of doing things... but what can you expect from a country full of people that eat blood pie.
