How about a "Guys Night In" (without the dudes)?
Order in a big steak/ribs/wings dinner, 6-pack of his fav beer, rent 2 of his fav films (preferably action to go with the theme), popcorn (or whatever munchies he likes), a surprise gift bag with a Playboy magazine, razor, deck of cards - use your imagination - and ticket(s) to a football/baseball/whatever game.
If nothing else, he'll appreciate all the thought/work you put into it - hey, guys love to know their lady did something unique and thoughtful too!
