But with over 80k shots taken over the years, there's no way I'd remember specs on camera settings without digging back through the originals and checking the exif data.

Typically I shoot at 80iso, exposures for the low-light shots can range from 2-3 secs up to 30 secs on bulb setting (and tripod with shutter release cable).

Often I'll lightpaint a scene with a maglite flash and long camera exposure.
