Medium, but I usually order it medium rare so it will arrive medium. I'd rather send it back to have it cooked a bit longer than have it overcooked. It HAS to be pink and juicy inside or it's just not steak to me. And I like ribeye because it has that yummy crispy brown fat on the outside.
And I like mine naked. No marinating, no seasonings, NO steak sauce... just a little salt sprinkled on at the table. I don't like any foreign flavors ruining the natural steak flavor.

90% of the time, I eat mine just like that... but the other 10%, I'll marinate in Marsala sauce and cook with mushrooms or use some other kind of interesting marinade. I love steak. mmmm mmmm mmmm
