The answer to that is simple. Go for the niche you understand the best. Then you have a chance of success.
Put a site together that you want to view. Then the surfer will feel it has been designed with him in mind and not simply to relieve him of a few bucks.
Too many sites already out there designed with little knowledge of the niche and no empathy.
