Changing Nameservers
If a hosting company has set up everything correctly, shouldn't there be NO downtime/accessability problems when changing the ns??? I thought this process would be smooth.....

It depends on who you use for a registrar. A few of my client's domains are with Network Solutions and there is ALWAYS downtime.
