Oh I love hot sauce. Some of the real hot stuff can also have good flavor to them and even at times seem fruity. Every summer I make about 20 quarts of the stuff in various flavors and heat levels.
I just never much understood those that were so damn hot (often created with capcasin extract) that a single drop would kill your tastebuds for a week. I am one of those that feel a balance of heat and flavor is important and it must never kill your ability to taste latter.

agreed...its all about the taste not just the hot...that just adds to the fun =))
