Ouch, I notice that phenomenon myself as well..
I guess all You can do is this:
Set some time aside to do nothing but priority-planning...
1. Try to figure out what would be profitable the SOONEST and MOST and just accept having to shuffle the rest out to the "Future"-list (and later only pick something from there when there's time & money for it).
2. Focus on the selected projects, whenever You sense that "Too Much!"-stuff again, squeeze in another prioritizing-session...
It's good to step back once in a while too, take a few one-day-vacations every month and at least don't think about NEW projects those days.
I work this way and I'm coping this far
