        there's a plugin for that for photoshop, but I usually just select the iris part and adjust the color with image/adjust/hue saturation

          Use a soft round brush about the size of the red area and set the foreground color to black and the brush style to multiply. That usually works pretty well as a quickie touchup. You can also make a selection of the red area and use the Hue/Saturation dialouge box to lower the saturation and the lightness.
