I actually cheat a bit and use a Photoshop action that emulates Provia slide film, which produces rich and saturated colours. However with my 300D/DRebel settings (neutral colour, AdobeRGB) the images put out by the camera are actually more bland than the scene, so the colours in the final image aren't all that far off... maybe just a *little* enhanced.

Also, since I'm shooting at night the normal colours go out the window anyway... what the camera sees and what I see are very different.
