If the case was about a muslim who refused to eat pork and was fired as a result, that would be religious discrimination. Ms. Morales, who is Catholic according to the article, was eating pork because she wanted to, not because anything in her religion required it.

Ah... you are wrong. Forget about what Ms. Morales did, instead focus on what the company did. It still is discrimination.
