I've been looking at a few different gallery page creators tonight, but i cant find one that allows for me to use my own html templates.

Is there a big demand for this? AVS Weasel creates galleries from templates as part of the site creation process. If enough people are looking for something like this, I might be able to spin off a gallery creator from my AVS Weasel code.
