Sunset Station's Feast buffet is cool. So is the Courtyard Buffet at the Stratosphere. Margaritas in the Frontier has the best fajitas in the entire world and Jokers Wild has all kinds of cheap entrees. The Italian restaraunt in Sam's Town is not really cheap but it isn't really expensive, either, and they treat you like a king.
There's tons of shows, but they'll run you a nice piece of change. I kind of want to see Zumanity and the Cirque de Soleil but I haven't gotten around to it, yet. Hit me up if you want to have lunch (or dinner) sometime. Me and eroswebmaster and Ludedude are sort of working on a get-together.

There are TONS of awesome bars with great drink prices, cheap buffets with good food, awesome steak houses and a shitload of attractions.
For bars, check out any PT's pub..a small casino called "key largo which is just off the strip. It has 50 cent drafts, .75 well drinks, 1.00 bottled beer and half price appetizers all day. If you like margaritas, Kahunaville at the Treasure Island is the best.
As far as steakhouses, Tillerman is top notch, along with Ruths Chris, and the steakhouse at the Venetian.
For clubs...Try Studio 54, RA, Venus, Light, Ice, C2K, Whiskey Sky.
For attractions...Check out some shows like Mystere, O, Zumanity, a hellicoptor ride, the big shot on top of the Stratosphere, Red Rock, etc.
There will be plenty of things to do. Hoefully you want to meet up with some Vegas Webmasters and we can all shoot the shit and go crazy for a day!
