    I'm pretty sure "champaign" is correct.

    That's how I've always spelled it. The only bottles I have on hand are from italy and say sparkling wine. I checked google and dictionary.com too.

    is that not correct? if not, maybe I just use that spelling because I go to that town sometimes (u of i) for parties. any thoughts?

                                          deffinetly spelt champagne as thats the region it comes from in France, so god knows who made up the other spelling. No sparkling white compares to champagne and if it does it will always be compared to a champagne cause thats what they're trying to imitate.
